Vin Jaune is one of France's great oddities: dry Savagnin left in barrel for years under a living veil of yeast. Rolet's Arbois bottling is about as classic an introduction to the style as you'll find. The 2018 was fermented with native yeast from 40-year-old vines growing on gray marl at 280–380 meters, then spent six years in barrique. Rolet takes the fruit for its Vin Jaune from the south-west-facing 'Chagnon' lieu-dit in Montigny-lès-Arsures. Savagnin ripens late, so it's picked by hand at the very end of harvest. A good one for the dinner table: Arbois was France's first AOC, created in 1936. Désiré Rolet started the domaine in 1942, and his four children joined the family business in 1958. The vineyards are constantly ploughed, with no herbicides or pesticides. Don't serve it ice-cold. Rolet's own advice is to pour it at about 16°C, open it two hours ahead, and know that it will keep for 20 years or more.

"The 2018 Arbois Vin Jaune has a classic nose of walnut and pronounced nutty complexity. Powerful and concentrated, it reflects the generosity and ripeness of a warm vintage while retaining excellent freshness throughout. The palate is broad and expressive, carrying through to a long finish marked by sapid persistence." —Nicolas Greinacher

More about Rolet

Founded in 1942 and now one of Jura's most serious voices. Domaine Rolet's 65 hectares embrace all five Jurassian grape varieties on sustainably farmed land: Chardonnay and Savagnin for whites, Poulsard, Trousseau, and Pinot Noir for reds. Hand-picked, separately vinified, wild fermented—these are wines that taste like Alpine precision without apology. Vin Jaune, Chardonnay, Poulsard, all done with quiet confidence that builds respect.

Tasting Notes & Food Pairings

Perfect Pairings

Veal chop braised with morels; Bresse chicken in a morel and vin jaune cream sauce; well-aged Comté; roast pheasant or other game birds; walnut tart or tarte tatin.

Tasting Profile

Expect the classic Vin Jaune profile: walnut, curry spice, bruised apple and toasted almond, all from years spent in barrel under a veil of yeast. Think of a fino sherry's nutty, salty tang, but without the fortification, and with more weight and a backbone of bright, piercing acidity. It typically finishes bone-dry, savoury and very long, and the style is built to age for decades.
