Great sweet wine has an image problem: too precious, too formal, saved for an occasion that never actually arrives. Royal Tokaji's Late Harvest is the cure. It comes from Tokaj, the region that essentially invented botrytized sweet wine and was classifying its vineyards more than a century before Bordeaux got around to it, and it's made from grapes left hanging to shrivel and concentrate. Next to the full Aszú wines it's lighter on its feet and far quicker to enjoy — honeyed, apricot-scented, and cut through with the searing acidity that keeps Tokaji from ever tasting cloying. Royal Tokaji itself was founded in 1990 by Hugh Johnson and partners, who moved fast to acquire some of the region's finest plots the moment the communist state let them go. It comes in a 500ml bottle, so there's really no excuse. Serve it cold.
