Saumur Blanc is one of the Loire's most underrated whites, and Sables Verts farms barely a hectare of Chenin among its mostly red holdings, which makes this a small but serious bottling. Caroline Meuree and Herve Malinge took over the historic domaine in 2019 and farm as naturally as possible (HVE-certified, with organic conversion underway). The name Sables Verts refers to the green marine sand beneath the tuffeau, the geological signature of the appellation and a reliable engine of Loire Chenin tension. The 2024 is taut, stony and gently citric, more chiselled than tropical, with the kind of saline drive that puts oysters and fresh goat cheese in mind before anything else.

More about Sables Verts

Domaine des Sables Verts was founded in 2019 by the husband and wife team of Caroline Meurée and Hervé Maligne. The couple cut their teeth in Bordeaux, and Hervé spent time in the Roussillon before arriving in Saumur. They inherited an exceptional mosaic of old vines across Saumur, including a prime parcel in Les Poyeux planted in 1950, right next door to vines belonging to Clos Rougeard and another Saumur legend and longtime Flatiron favorite, Thierry Germain.

Sables Verts, or “green sands,” refers to the iron-rich marine deposits that define many of the appellation’s best vineyards. In Les Poyeux, these green sands mix with clay-limestone over tuffeau bedrock, yielding Cabernet Franc of remarkable freshness and finesse, with the structure to age beautifully.

Fermentation takes place in a combination of stainless steel tank and mostly used, or very lightly toasted, barrels.

Aging

Four month elevage in a combo of tank and wood, and then assembled in January after harvest. Bottling takes place in early spring, with only a light filtration and very low addition of SO2.

Perfect Pairings

Oysters on the half shell with mignonette, fresh goat cheese with herbs and olive oil, sole meuniere, scallop crudo with citrus, asparagus and lemon risotto, a quiche aux poireaux, sushi and sashimi.

Tasting Profile

Dry, taut and chiselled, with lemon pith, green apple, white flowers, chamomile and a chalky, saline finish. Medium-bodied with bright acidity and serious mineral cut.
