The name is not marketing: this village Chablis is assembled from parcels on both banks of the Serein - Les Pargues over on the left bank, Chapelot on the right, the latter pressed up against Billaud's own grand cru plots beneath the hill. All of it sits on Kimmeridgian marl, the fossil-packed ancient seabed that gives Chablis its salinity, and all of it stays in stainless steel on fine lees with no oak at any stage. Samuel Billaud left the family's Domaine Billaud-Simon in 2009 to build his own gravity-fed cellar in the middle of Chablis, over vaults dating to the thirteenth century; when the old estate was sold in 2014 he kept roughly four hectares of its vines. 2024 was the opposite of a gift - the Serein flooded the town in April, frost followed, hail came in May, mildew ran all summer, and yields fell to a fraction of normal - but the wines that came through are the most classically proportioned Chablis in a decade, all citrus and tension. Serve it cold and give it a few months in bottle if you can wait.

"The 2024 Chablis Grands Terroirs comes from Les Pargues, Bas Chapelot and Fontenot, cropped at 20 hl/ha. Billaud was pleased that there was no botrytis this year. It has a fragrant nose with yellow plum, fern and light crushed stone scents emerging with time. The palate is fresh on the entry with a bright spine of acidity. Samuel Billaud made wine for over 20 vintages at his family's Domaine Billaud-Simon before branching out in 2009 with his own vision. When the family domaine sold in 2014, he secured several prime vineyard parcels in Les Clos, Vaudésir, Blanchot, and other Premier Cru sites—15 hectares total. Hand-harvest for top cuvées, measured oak use (10–20% new), stainless steel aging for village wines. This is a modernist approach to classical Chablis—mineral, precise, terroir-driven.
