Timorasso nearly vanished. After phylloxera, and a century of farmers replanting to easier grapes, Piedmont's great white was down to a scattering of rows in the hills around Tortona before a handful of growers began bringing it back in the 1980s. Scarpa - an arch-traditional house in Nizza Monferrato founded in 1854, which since the 1960s has treated Barbera with the reverence the Langhe reserves for Nebbiolo - planted it well outside that home turf, which is why the label reads Monferrato Bianco rather than Derthona. The fruit comes from the I Bricchi estate on the border of Castel Rocchero and Acqui Terme, southwest-facing at 350 to over 400 meters on clay with a little sand, in a dry, sunny pocket that catches the wind off Liguria. There is no oak anywhere: six months in stainless steel and at least six more in bottle, which leaves the grape's remarkable texture and salinity to do all the work. Give it twenty minutes of air, and know that Timorasso is one of the few Italian whites that genuinely improves over five to ten years.

Tasting Profile

Chalk, sea shell, hay and yellow pear on the nose. Medium-bodied and textural rather than crisp, with a forceful acidity that builds through the mid-palate before the finish turns silky and saline. Long and mineral.
