The first legal American absinthe released after the U.S. ban was lifted in 2007, St. George Absinthe Verte remains one of the most acclaimed and respected spirits in this category. Brandy is infused with the unholy trinity of wormwood, fennel, and star anise, then this infusion is distilled on our 1,500-liter copper pot still. After that, we perform a secondary infusion of mint, tarragon, opal basil, lemon balm, hyssop, and stinging nettles.

Perfect Pairings

Louche it properly: drip ice water slowly over a sugar cube, three to five parts water to one of absinthe. It's also essential behind the bar - a Sazerac rinse, Corpse Reviver No. 2, Death in the Afternoon. Alongside: oysters, olives, salted nuts, anise cookies.

Tasting Profile

Anise and fennel lead, with wormwood's bitterness underneath and a green, garden-fresh lift of mint, tarragon, opal basil, and hyssop. Turns opalescent and creamy with water; full and coating, finishing cooling, herbal, and gently bitter.
