C+C stands for Cramant plus Chouilly, two of the Côte des Blancs' Grand Cru villages, and this is the clearest, most affordable way into Aurélien Suenen's chalk-obsessed Chardonnay. Both villages sit on chalk-rich soils that give Chardonnay its precision and minerality, and Suenen's whole project is built on getting that out of the bottle rather than smoothing it over, starting with organic farming, certified in 2019. Aurélien took over the family estate in 2009 and refocused the range entirely on Blanc de Blancs; his great-grandparents Marcel and Simone were the first Suenens to bottle their own wine rather than sell grapes to the big houses, with Simone stamping the bottles by hand. The wine is finished Extra Brut, so there's almost nothing sweet standing between you and the chalk. Grower Champagne of real seriousness, and a very good argument for drinking it instead of a big-house label.

"The NV Extra Brut Blanc de Blancs C + C Grand Cru gets its name from Chouilly and Cramant, the villages where the Chardonnay was picked. The nose presents yellow apple peel with a sheen of waxiness and a sense of dried ears of wheat and a touch of ocean air. Saltiness is immediate on the slender palate, where concentration gives a sense of salted apple flesh, wet oyster shell and deep chalk. Slender, earthy, intense and deeply oceanic. "Closer in style to the 2018 rendition than to the 2021, the new Blanc de Blancs Grand Cru C + C, as ever, draws from the communes of Cramant and Chouilly. Based on the 2022 vintage and complemented by 50% perpetual reserve, it was disgorged in July 2025 with a dosage of four grams per liter, with roughly half of the wine vinified in tank and the remainder in wood. The wine opens with notes of orange oil, pear, dried flowers and freshly baked bread, leading into a medium- to full-bodied, rich and textural palate, underpinned by racy acidity and dry extract, and concluding in a long, sapid finish. Readers will recall that it was this cuvée that prompted Aurélien Suenen to reconsider his approach to the lieux-dits, potentially incorporating a reserve-wine component to temper vintage character and allow site to take center stage." —Kristaps Karklins

Perfect Pairings

Oysters on the half shell, sole meunière, a plate of jamón and Comté, fried chicken, or salt-baked branzino. Also excellent with sushi and sashimi, or potato chips and crème fraîche.

Tasting Profile

Dry and taut, with aromas of lemon peel, green apple, white flowers and a bit of toasted bread. Medium-bodied with a fine, persistent bead and high, bright acidity. Almost no perceptible sweetness — the finish is chalky, saline and long.
