Sébastien Cathiard's quiet domaine in Vosne-Romanée produces some of Burgundy's most sought-after Pinot Noir from just over four hectares. This Nuits-Saint-Georges Premier Cru comes from Aux Thorey—often called the Volnay of the Côte de Nuits for its emphasis on perfume and elegance over raw power. Shallow limestone soils with fine gravel produce a wine of cool mineral edges, generous fruit, and firm but polished tannins. Sébastien's winemaking is meticulous: complete destemming, ten-day cold maceration, indigenous-yeast fermentation, and no added sulfur. In the record-warm 2023 vintage, these methods preserved freshness and aromatic complexity, delivering blue and red berry fruit, floral notes, and a fine bead of acidity that keeps everything in balance. Production is tiny; allocation is fierce.

"The 2023 Nuits Saint-Georges Aux Thorey 1er Cru has an open and "airy" bouquet of red cherries, wild strawberries and wilted rose petal scents, and is not concentrated like the previous vintage but very focused. The palate is silky-smooth on the entry and the 60% new oak is just a little "vocal" at the moment, imparting a seductive lactic element toward the finish. That will be subsumed with time. Afford this modern-styled NSG three or four years in bottle." -Neal Martin
