Japan's first dedicated craft gin distillery didn't just make gin—it inspired a generation. Noriko Kakuda Croll and her team's flagship Ki No Bi uses 11 botanicals, most foraged and Japanese: yuzu, shiso, bamboo, sanshō, gyokuro tea. Each botanical is macerated and distilled separately, then blended with the precision of a sake house. The result tastes unmistakably Japanese: refined, subtle, and completely uncompromising. It's why dozens of Japanese gins followed.
