Supermarket Trebbiano is as watery and insipid as a supermarket tomato; Tiberio's is the heirloom version. Part of the difference is the grape itself - this is Trebbiano Abruzzese, a distinct old variety rather than the ubiquitous Trebbiano Toscano, propagated here by massal selection from very old vines the family came across when they got started in Cugnoli in 2000. The fruit comes from a vineyard first planted in 1959, still trained on the traditional pergola abruzzese at a low density of 2,500 vines per hectare, on limestone with a gravel-sand subsoil at 350 meters. Only free-run juice is used - there is no pressing - and the wine ferments with indigenous yeasts in stainless steel with malolactic blocked, which is how it keeps total acidity above 7 grams per liter. It makes the case for Trebbiano as a genuinely serious white, and it has the acid spine to hold for years.
