Palo Cortado is the unicorn of sherry styles—beginning life as a Fino, but evolving like an Oloroso—and Valdespino’s Viejo C.P. is one of the greatest traditional expressions of it.

The nose is captivating: toasted hazelnut, orange peel, dried fig, saddle leather, and sea spray. On the palate, it’s dry, intense, and almost savory, with bracing acidity, saline edge, and a finish that’s endlessly nutty and umami-rich. There’s zero sweetness—this is about age, structure, and slow, careful oxidative evolution.
