Founded in 1430, Valdespino is one of the region’s oldest and most traditional bodegas. Their Fino “Ynocente” is widely considered a benchmark: a single-vineyard Fino from the esteemed Macharnudo Alto vineyard. In the glass, expect briny sea spray, green almond, chamomile, and a faint echo of toasted bread. It’s bone-dry, deeply savory, and finishes with a mouthwatering snap of salinity, perfect for pairing with tapas, seafood, or a wedge of Manchego.

More about Valdespino

Almost no Sherry has an address, but Valdespino's do. This old Jerez house built its name on single-vineyard Sherry from Macharnudo, the hills of chalk-white albariza soil northwest of town that are counted among the greatest vineyard land in the whole region.

The Valdespino story in Jerez is traced all the way back to 1264, when a knight named Valdespino was granted land there; the family ran the bodega until 1999, when it was bought by Grupo Estévez. The old-school approach survived the sale. Valdespino is one of the last houses to ferment its base wines in oak barrels rather than steel, and its flagship, Fino Inocente from the Macharnudo Alto vineyard, ages under flor through ten criaderas instead of the usual three, reaching around ten years of age before bottling.

We once headlined these as “Champagne-like Sherry,” and it fits: chalk soils, long aging under yeast, and wines with real tension and precision. The range runs from bone-dry Fino, Manzanilla and the Amontillado Tío Diego through old Oloroso and Palo Cortado (including VOS and VORS bottlings, certified at over 20 and over 30 years) to sweet Moscatel and Pedro Ximénez. Start with Inocente, and treat it like the serious white wine it is.
