Founded in 1430, Valdespino is one of the region’s oldest and most traditional bodegas. Their Fino “Ynocente” is widely considered a benchmark: a single-vineyard Fino from the esteemed Macharnudo Alto vineyard. In the glass, expect briny sea spray, green almond, chamomile, and a faint echo of toasted bread. It’s bone-dry, deeply savory, and finishes with a mouthwatering snap of salinity, perfect for pairing with tapas, seafood, or a wedge of Manchego.
