"Coeur de Cuvee" is drawn only from the middle of the first press, the finest, most delicate juice, which Vilmart ferments and ages in oak barriques to make this Chardonnay-led prestige bottling. Vilmart is one of the great grower estates of Rilly-la-Montagne, and their top wines age with a richness that has famously been mistaken for mature white Burgundy. Now two decades on, this 2004 has reached that stage: toasty, deep, and complex while the mineral tension underneath keeps it lifted and alive. A rare chance to drink a grower prestige cuvee at full maturity.
