This is the flinty one. Constellation du Scorpion comes off Les Bouloises in Saint-Satur, a southwest-facing slope of silex — flint mixed through loose, sandy siliceous clay — where the stones thicken as you climb until the ground at the top is essentially paved with flint. That flint is what puts the smoke and the tension in the glass, and it makes this the most reserved of Vincent Gaudry's Sancerres in its youth. Gaudry farms eleven hectares in Sury-en-Vaux with his wife Severine and was the first grower in Sancerre certified biodynamic by Demeter, in 2004; here he ferments with native yeasts and raises the wine in a single large used French oak foudre for eighteen months, with no batonnage and a light hand on sulfur. The label carries little more than the scorpion's astrological sign, which is Gaudry's way of pointing at the sky rather than at a marketing department. Give it a year or two in the cellar, or open it a good hour ahead.
