Vollenweider makes sparkling wine only in years when the Mosel hands them ripeness and acidity in the same breath, and every release gets its own cuvée number because the blend is never the same twice. The project started in 2018, when the estate bought a small parcel of Pinot Blanc inside the Wolfer Goldgrube; Chardonnay followed, from Briedel on classic Mosel slate and from Nittel on the limestone of the Upper Mosel, and in cooler years a little Riesling from the estate's coolest site, the Trarbacher Burgberg, joins the blend. This is Nr. VI, built on the cool, high-acid 2021 vintage, and it is finished brut nature: zero dosage, bone dry, nothing added back to soften the edges. The horned figure on the label is Pan, the estate's patron, whose statue sits above the archway at the entrance of the old winery building in Traben-Trarbach. Quantities are tiny. Serve it cold, as an aperitif or with the first course.

Tasting Profile

Fine, persistent bead. Green apple, lemon pith, wet stone and a little bread crust from the lees aging. Light-bodied and high-acid, with a chalky, completely dry finish — no sweetness at all.
