The name Im Schöttel comes from Schüttung, German for scree — a plain description of what this vineyard receives, since a towering rock face directly overhead sheds a steady barrage of stone into it. That gives this parcel of the Wolfer Goldgrube a soil that is extremely stony and dominated by raw grey slate, far poorer than the ground lower down the hill. It also sits higher up the slope and turns more toward the southwest, so it is drier and sunnier than its neighbors, and the cliff radiates back the heat it stored all day well after sundown. The wine that results is denser and more saline than the cooler Unterste Jonpfad parcel but also more generous and effusive, without giving up cool-climate cut. Since 2024 Moritz Hoffmann and Vinzent Ewest have bottled these Goldgrube parcels separately and kept botrytis out of the dry wines entirely. Bone-dry Riesling — Trocken, with no residual sweetness.
