Rye at 101 proof, which is rather the point: it doesn't vanish under vermouth and bitters. Wild Turkey's rye mash bill is famously barely legal — 51% rye, filled out with 37% corn and 12% malted barley — so it lands rounder and more caramel-sweet than the aggressive high-rye style, while the extra proof keeps the spice sharp. It's made at the Lawrenceburg, Kentucky distillery run by the Russell family and aged in the house's deeply charred No. 4 'alligator' barrels; there's no age statement, which for a Kentucky straight whiskey means at least four years in wood. It went scarce for a stretch during the rye shortage of the early 2010s, and bartenders have been glad to have it back ever since.
