Willi Schaefer, Graacher Domprobst Riesling Kabinett, 2025

For many of us, Willi Schaefer is the platonic ideal of Mosel Riesling, and this is the family's Kabinett from Graacher Domprobst, a VDP.Grosse Lage slope that rises steeply right above the village of Graach. 2025 tested them. Before September the vineyards were in magnificent shape and the family was hoping for a picture-perfect year like 2018. Then several low-pressure systems brought heavy rain, and the answer was strict selection at the vine and a harvest that finished on 6 October, the earliest end of picking in the winery's history. The Schaefers describe their 2025s as fruity, deep, brilliant and strongly mineral, and they call the Kabinetts "playful, fruity." Domprobst is weathered Devonian slate facing south-southwest on slopes of 45 to 75 percent, and the house credits its deep, clay-rich topsoil for wines that are wilder, earthier and spicier than those from Himmelreich, the vineyard that surrounds it. (The name comes from the Cathedral Provost of Trier, who was owed a third of Graach's wine tithes.) This is the regular #03 bottling; the family kept a separate special cask back for the Grosser Ring auction in Trier. With just 4.2 hectares, all Riesling, and about 2,900 cases a year, there's never much of it to go around.

More about Willi Schaefer

Christoph and Andrea Schaefer don't have much land (just over four hectares), but that’s not really why their wines are so hard to get. If they had twice the acreage it would still sell out many times over. The wines are just that good – and that coveted by collectors (and drinkers!) worldwide.

In fact, they're a sort of platonic ideal of Mosel Riesling. The family is one of Germany’s great traditionalist producers, doing everything old school and low tech, but making absolute pure and marvelously complex wines – the kind that are often called “filigreed.” With lots of ungrafted old vines (phylloxera doesn't do so well in the stony slate soils) they have intense minerality, but with plenty of sun on the steep, steep slopes, there’s tons of laser-focused fruit, too.

Tasting Notes & Food Pairings

Perfect Pairings

Thai larb or green papaya salad, Vietnamese caramel pork, pork schnitzel with lingonberry, smoked trout, dan dan noodles.

Tasting Profile

Expect the classic Mosel Kabinett profile: green apple, white peach and citrus over a smoky, slate-driven minerality, with the hint of spice and earth typical of Domprobst. Light-bodied and gently off-dry, with racy acidity keeping the sweetness in check, it typically finishes long and refreshing, and wines from this site usually reward a few years in the cellar.

WINE GUIDES

German Wines

Is there a better grape than Riesling? Is there a better value? Its fruit purity, its perfume, and its mineral nuance are all unparalleled. And for centuries, the top German Rieslings were priced accordingly: at least as expensive as the top red wines of Bordeaux and Burgundy. But nowadays you could spend a lifetime exploring Germany’s great Riesling-producing regions while staying well within your budget. You might take an occasional break to try Germany’s other white grapes or perhaps a glass of Spätburgunder (the local name for Pinot Noir). It’s time to get started!
