Winemaker Hongjing 'Ian' Dai has become the big brother of natural wine in China, though his bottles come off as confident and honest rather than overtly natural. He calls his approach 'slow' winemaking: no dogma, just a focus on sustainable land and good grower partnerships, with delicious, easy-drinking wine as the goal. The Cathay Cabernet-Merlot is one of his more classic-leaning reds, a polished Bordeaux blend from Ningxia. The 2021 offers dark berry, plum, and a savory, herbal edge with smooth tannins. A genuinely tasty introduction to what China can do.
