Yuho sake, brewed by Mioya Shuzo in Ishikawa Prefecture on the Noto peninsula, represents a dedication to Japan's traditional brewing heritage. The 'Rhythm of the Centuries' is crafted using the ancient kimoto method—a labor-intensive process established in the 17th century that involves manually mashing rice and koji with long poles to encourage lactic acid growth. This technique creates complex, often wild flavor profiles with high acidity and profound umami character that modern breweries rarely pursue. Toji Yokomichi-san has perfected this traditional craft, aging the sake four years in bottle to develop rich, earthy, and wild aromas and flavors. With a 55% polishing ratio and Gohyakumangoku rice for koji and Notohikari local rice for kakemai, this junmai (pure rice) sake achieves a remarkable flavor complexity: salted dulce de leche, rice pudding, mushroom, white miso, toasted rice, chocolate, nuts, and white pepper. This is sake for contemplation and food pairing—a living bridge to Japan's winemaking traditions.
