A Fleurie Favorite Returns: Anne-Sophie Dubois's Captivating 'Les Cocottes'
In just a few short years, Anne-Sophie Dubois has risen through the ranks and become one of our favorite Beaujolais winemakers. Her wines are some of the most elegant, Burgundian Beaujolais we’ve had the pleasure of tasting.
She spent her early wine-making years in Burgundy, learning the ropes in Volnay. Her Burgundian background influences the structure and savoriness of her wines. While many Beaujolais winemakers strive to make silky, pretty wines (that don't offer much beyond fruit), Anne-Sophie's have complex tannic structure and lots of tension.
A core tenet at the domaine is that 80% of a wine is made in the vineyard; farming is organic, with the goal of creating a microcosm of biodiversity. Anne-Sophie credits the poor granite soils with much of her success — a robust grape like Gamay needs to be tempered by struggle to reveal its finer side.
From the Cru of Fleurie, she produces three wines, utilizing different vineyards and techniques to yield delightfully distinct textures, flavors, and structures. Today, we’re focusing on “Les Cocottes”, Anne-Sophie’s sole foray into semi-carbonic winemaking. In contrast to her other cuvées, it’s meant to be an easygoing, “crushable” wine that you can drink on release.
Semi-carbonic is the perfect approach for capturing fruit as well as savory, earthy and mineral notes. Some of the grapes are crushed, releasing tannins and color, and because whole bunches are used, the stems impart notes of spice, flowers and forest floor. It’s the most obviously Fleurie of Anne-Sophie’s trio, with delicate perfume of crushed violets and a silky, juicy palate.
