PYCM Saint-Aubin: An Insider's Secret for Great Burgundian Terroir

A few years ago, we would have easily considered Saint-Aubin to be one of the “Edges of Burgundy”, but this sleepy village has emerged as one of the region’s hotspots of talent and terroir.

In Burgundian terroir and New York real estate, it’s all about location, location, location. Saint-Aubin is adjacent to both Puligny-Montrachet and Chassagne-Montrachet — pretty decent neighbors, to be sure. Another important component to Saint-Aubin’s terroir is elevation. The vineyards are higher then elsewhere in the Côte, ranging from 300 to 350 meters (around 1000 feet) high, with the highest vineyards lying on the Montrachet side (yes, Saint-Aubin also neighbors the Grand Cru of Montrachet).

Pierre-Yves Colin-Morey hardly needs an introduction at this point, but here’s the long and short of it: he was an early master of a style of white Burgundy that has now become very popular: less oaky (thanks in part to larger barrels), no lees-stirring, earlier picked, a bit more reductive. He received tons of critical acclaim, and allocations for his wines are fiercely sought after by collectors.

But what we love most about PYCM is his championing of Burgundy’s so-called lesser terroirs, like Saint-Aubin or Pernand-Vergelesses, which happens to be his home base. He’s been able to bring the less-famous sites to a wider audience, lifting up his friends and neighbors at the same time.
