The de Moors are Chablis people through and through, so their one red is worth a look on curiosity alone — and it's made the way you'd hope: whole clusters, a partly carbonic fermentation running two to three weeks, a year in used barrel, bottled unfiltered with just a touch of sulfur. Vendangeur Masqué, "the masked harvester," is their label for wines made from purchased fruit and rented vines, vinified in their own cellar in Courgis, the village 7km southwest of Chablis where Olivier grew up. For 2024 the Pinot Noir comes from the Mâconnais, from the same grower who supplied the Chardonnay for the white version of this wine. Alice and Olivier are both Dijon-trained enologists who farm organically and split the work — he in the vines, she in the cellar and office — though every decision gets made together. The result is 100% Pinot Noir with the same clarity and light touch they bring to their whites, at a far friendlier reach than Chablis Premier Cru. Drink it young, and give it a slight chill.

Perfect Pairings

Roast chicken with herbs, charcuterie and cornichons, mushroom tart, duck breast with cherries, or a plate of soft washed-rind cheese. Also good with grilled salmon or a simple burger.

Tasting Profile

Light to medium bodied and bright, with red cherry, raspberry and a floral, peppery lift from the whole clusters. Fresh acidity, fine and gentle tannins, very little oak influence. Clean, juicy finish. Best with a slight chill.
