More about Arnaud Baillot

Arnaud Baillot is proof that you don't need to be born into a Burgundy dynasty to make serious Burgundy, though marrying into one doesn't hurt. Originally from Auxerre and not from a winemaking family, he earned a master's degree in 2013 and in 2015 set up on his own in Beaune with his wife Laure, granddaughter of the founder of Domaine Hudelot-Noëllat in Chambolle-Musigny.

The couple started small, as négociants buying grapes, and put everything they had into vineyards of their own. Today they own about 10 hectares, mostly in the Côte de Beaune and centered on Meursault, Pommard and Beaune, with plots in Volnay and Savigny. Arnaud has farmed them organically since 2017, without certification, and a small range made from purchased grapes carries on alongside the estate wines.

The cellar approach is light-handed. Grapes are picked by hand and fermented with native yeasts. Whites ferment and age in barrel with no more than 15% new oak; reds ferment in tank with gentle pump-overs, then spend 15 to 18 months in barrel and are bottled unfiltered. The range runs from Bourgogne up through village and premier cru wines such as Santenay La Comme. Expect precise, aromatic Chardonnay and Pinot Noir with clean lines and no makeup.
