Three barrels a year. That is what François Bitouzet pulls from his 0.15-hectare slice of Les Caillerets, the iconic Volnay 1er Cru wedged between the holdings of d'Angerville and de Montille. The 2010 vintage in Burgundy was tiny but extraordinary, pure and structured, and fifteen years on this bottle is just beginning to show what it can do. Bitouzet works the cellar in the most classical Volnay manner: destemmed berries, two-week cuvaison, twice-daily pigeage, malo in barrel, then twenty months of patient elevage. The result is exactly what people mean when they invoke the word Volnay: silken Pinot Noir from limestone marl, scented and precise, transparent to the place. A textbook expression of one of the Cote de Beaune's prototypical sites, finally entering its drinking window.

Domaine Bitouzet-Prieur sits in the heart of Volnay, born from the marriage of Vincent Bitouzet and Ann Prieur, combining their family's vineyard holdings. Today, Francois Bitouzet works alongside his parents, maintaining organic viticulture with techniques like sexual confusion to reduce insect pressure. Their Passetoutgrains—two-thirds old-vine Pinot Noir, one-third Gamay from a single vineyard plot—receives proper élevage in used barrels. This is lovely, complex Burgundy that delivers sheer pleasure without pretension.

Tasting Profile

Silken, lifted, precise. Red cherry and rose petal lead, edged with forest floor, gentle spice, and the chalky, almost saline lift that limestone marl gives Volnay. Tannins are ripe and fine-grained, the finish long and quietly resonant.
