Celler de Capçanes is the rare cooperative whose top wines stand alongside the finest non-kosher bottles in Spain. Tucked into Montsant — Priorat's quietly serious neighbor — Capçanes began making Peraj Ha'abib (Hebrew for 'Flower of Spring') in 1995 at the request of Barcelona's Jewish community, and has been pushing the kosher conversation forward ever since. This Pinot Noir bottling is a recent and unusual chapter: declassified to D.O. Catalunya (Pinot is not a Montsant variety), sourced from a single estate parcel at 500-600 meters on clay and slate, aged twelve months in new French oak. Floral, fresh and elegant, with red fruit, gentle spice and a quietly persistent finish. Certified kosher, kosher for Passover, mevushal; just 2,000 bottles produced.

Aged for 12 months in oak barrels, this purplish wine presents ripe fruit aromas complemented by hints of ash, tobacco and a delicate herbal bouquet, all set atop an oaky backdrop.
