Certified kosher — lo mevushal and kosher for Passover, made under the supervision of the Rabbi of Barcelona's Jewish community — and made entirely from white Garnacha off Capçanes' highest vineyards. Celler de Capçanes is the rare cooperative whose wines stand comparison with anything in Spain, and it has been pushing the kosher conversation forward since 1995, when Barcelona's Jewish community first asked them to make a wine. Montsant is Priorat's quieter neighbor, and elevation is what keeps a grape as generous as Garnacha Blanca fresh here. The winemaking is deliberately unshowy: hand harvest in late August, a cool fermentation, then time resting on the lees in stainless steel to build texture without any oak. Around 5,000 bottles. Serve it properly cold.
