Benoit's Pinot Noir from Courbes Raies shows how Burgundian training applies to Jura's distinctive terroir. Whole-bunch vinification in large Grenier tronconic vats followed by aging in barrels and demi-muids creates structured, mineral wine shaped by soil and site. Old vine material (mid-1980s back to 1959) provides depth; fossilized mollusk-bearing limestone provides mineral tension. This is not Burgundy, but carefully considered Jura Pinot that respects both the variety's elegance and the site's specific character.

"The 2023 Pinot Noir Courbes Raies comes from a mixture of older and younger vines on adjacent plots, 0.2 hectares of old vines and 0.3 hectares of younger ones, vinified together. The barrels I tasted last year were quite different, so I was curious to taste the bottled wine. It has a more varietal profile, clean and balanced, quite straightforward." —Luis Gutiérrez

More about Cellier Saint Benoit

Pupillin calls itself the world capital of Ploussard, and Benjamin Benoît is one of the young growers making that claim sound modest. He bottles single-parcel wines from some of the village's oldest vineyards, a rare approach for the grape.

The Benoîts sold their grapes to the local cooperative for generations. Benjamin's father, Denis, left the co-op and started making the domaine's own wine in the 2000s. When Denis died suddenly in 2019, Benjamin, freshly trained in Beaune and in Burgundy cellars including those of Nicolas Faure, Charles Lachaux and Amélie Berthaut, took over the family's 6.25 hectares. Pupillin sits just south of Arbois, largely on older Triassic marls that suit Ploussard especially well. He farms without weedkillers, with grass between the rows, and is working toward organic.

In the cellar he uses ambient yeasts, old barrels, little sulfur, and no fining or filtration. Ploussard is destemmed by hand through a perforated wooden board, while Pinot Noir and Trousseau go in as whole clusters. The range covers Chardonnay, Savagnin, Pinot Noir, a Crémant du Jura and the single-site Ploussards such as Chambines and Côte de Feule. Pure, bright, terroir-driven Jura from a grower to watch.
