Vau de Vey means "little valley," and the de Moors' slice of it is a steep, southeast-facing 0.92 hectares they bought in 2017 β€” their first foray into Premier Cru Chablis. They took a parcel farmed hard with chemicals and converted it to organics, planting fruit trees along the border to bring the bees back. Heavy marl here gives a Chablis with more flesh and broad than the razor-edged Chablis clichΓ© β€” Olivier says it reminds him of their Rosette parcel. Hand-harvested, destemmed, pressed gently and fermented spontaneously in 500-liter demi-muid, then aged on its lees without batonnage for a full year in demi-muid and another year in foudre before bottling unfiltered with just a touch of sulfur. That two-year elevage is why their Premier Crus come out a year behind the rest of the range, and it shows in the depth. Vines planted in 1983, no shortcuts.

Tasting Profile

Dry and medium-bodied, with citrus, orchard fruit and a chalky, oyster-shell edge. The long lees aging in barrel and foudre adds a creamy, nutty depth without making it heavy. Bright acidity runs straight through, and the finish is saline and long. Serve cool, not ice cold, and give it air β€” it will reward a few years in the cellar.
