Chablis, Burgundy's northernmost region, makes the purest expression of Chardonnay in the world. The cool climate ensures lots of refreshing acidity, and the famous limestone soils (Kimmeridgian and Portlandian, if you're keeping track at home) make for absolutely magical mineral notes. Great Chablis just vibrates with the inner tension of those structural elements and the Chardonnay's lovely fruit.

Chablis also offers amazing value at a whole range of prices. The simplest "Petit Chablis" is an everyday-priced wine, but very much a real wine of terroir. At the other end of the spectrum, Grand Cru Chablis offers some of Burgundy's greatest experiences, at prices that are a mere fraction of what you pay for white wine from the Cote de Beaune.
