Morillon is the Styrian name for Chardonnay, and Zieregg is Tement's flagship vineyard — a calcareous shell-limestone ridge on the Austrian-Slovenian border that the family has championed as the equal of any white-Burgundy cru. Steilriegel (the steep ridge) is a southwest-facing parcel within Zieregg, planted to 40-year-old vines on a 50% slope at 400-480 meters above sea level, on a 16-million-year-old coral-limestone saddle. The wine is fermented spontaneously and aged 24 months in wooden barrels, bottled unfined and unfiltered. The result is intensely mineral Chardonnay — a Styrian answer to top-tier Burgundy, with the depth and patience to age a decade or more.

The benchmark for Styrian Sauvignon Blanc. Brothers Armin and Stefan Tement run the family estate in Südsteiermark, where steep, south-facing slopes run right up to the Slovenian border; the family also makes wine on the Slovenian side under the Domaine Ciringa label. The vineyards are farmed biodynamically. The heart of it all is Ried Zieregg, a Grosse Lage site that yields one of Austria's greatest white wines: taut, smoky, chalky Sauvignon that ages beautifully.
