Saint-Émilion's limestone plateau makes the appellation's most aromatic, mineral-driven wines, and Château Canon sits right on it, just outside the village — a Premier Grand Cru Classé from arguably the best address on the hill. The rock here is asteriated limestone, porous enough to soak up rainwater and release it slowly, so the vines ripen evenly rather than in a rush; look closely and you can see fossil shells, starfish, oysters and sea urchins in the stone. Thousands of clay cracks run through that limestone holding water, and the house credits the capillary action of the clay for the freshness that runs through its wines. The plateau also dictates what gets planted: Merlot picks up a refined freshness from the porous rock, while late-ripening Cabernet Franc gains structure and staying power. Everything is managed plot by plot, with meticulous selection, and the grand vin is the cream skimmed off the top of that work. Under the Wertheimer family of Chanel since 1996, this is one of the right bank's most aristocratic estates, and a classic claret for the cellar.

Tasting Profile

Classic right-bank claret: dark plum and blackcurrant with cedar, tobacco leaf and a chalky, stony edge. Medium to full-bodied, fine-grained tannins, bright acidity from the limestone and clay, with a long, savory, mineral finish. Decant an hour before serving.
