Saint-Émilion's limestone plateau makes the appellation's most aromatic, mineral-driven wines, and Château Canon sits right on it, just outside the village — a Premier Grand Cru Classé from arguably the best address on the hill. The rock here is asteriated limestone, porous enough to soak up rainwater and release it slowly, so the vines ripen evenly rather than in a rush; look closely and you can see fossil shells, starfish, oysters and sea urchins in the stone. Thousands of clay cracks run through that limestone holding water, and the house credits the capillary action of the clay for the freshness that runs through its wines. The plateau also dictates what gets planted: Merlot picks up a refined freshness from the porous rock, while late-ripening Cabernet Franc gains structure and staying power. Everything is managed plot by plot, with meticulous selection, and the grand vin is the cream skimmed off the top of that work. Under the Wertheimer family of Chanel since 1996, this is one of the right bank's most aristocratic estates, and a classic claret for the cellar.

Antonio Galloni

93 points

"The 2014 Canon has a lovely bouquet with beautifully defined black fruit, melted tar, graphite and subtle touches of blood orange. This is very harmonious and seamless. The palate is medium-bodied with fine tannins and a keen line of acidity. It is very harmonious, with just a slightly baked and savory finish. Maybe it lacks a bit of charm, yet it will improve. Tasted blind at the Southwold 10-Year-On tasting." —Neal Martin

Jancis Robinson

"Still quite blue but less intense colour than the 2015. Mild, muted nose without real insistence. Mild mannered. Everything in the right place and just a little sinewy." —Jancis Robinson MW

Decanter

92 points

"Predominantly Merlot from the plateau. Continues in a classical, elegant mould. Pure and fragrant. Refined tannins and texture. Lovely freshness and length. Structured for ageing but guided by the philosophy of drinkability."

Wine Spectator

93 points

"Ripe but brightly defined, with damson plum, violet and bitter cherry notes, backed by a lively sanguine hint. The racy finish shows some flashy aspects, giving this good range."

Wine Enthusiast

91 points

"Barrel Sample. This wine is bright and fresh, showing only the lightest of tannins and crisp, zingy acidity. Red currants cut right through the palate giving it levity and suggesting that the wine will develop quickly."

More about Chateau Canon

Chanel's right-bank statement. When the fashion house bought Canon in 1996, they didn't mess with success. This 84-acre Saint-Émilion sits on limestone plateau with a 70% Merlot-dominant blend that's grown into one of the appellation's most consistent performers.

Tasting Notes & Food Pairings

Perfect Pairings

Roast leg of lamb with rosemary, herb-crusted rib of beef, duck breast with cherries, mushroom and truffle risotto, or a wedge of aged Comté.

Tasting Profile

Classic right-bank claret: dark plum and blackcurrant with cedar, tobacco leaf and a chalky, stony edge. Medium to full-bodied, fine-grained tannins, bright acidity from the limestone and clay, with a long, savory, mineral finish. Decant an hour before serving.
