Château d'Oupia's Les Hérétiques is the kind of bottle that makes you rethink what you expect from a Languedoc wine under twenty dollars. Made from old Carignan and Syrah vines in the rugged garrigue-covered hills of the Hérault, it delivers structure and personality that most wines at twice the price never find. The name is a nod to the Cathar heretics who once inhabited this region — stubborn, independent, and unwilling to play by Rome's rules. The wine follows suit. It's honest, food-friendly, and built for weeknight dinners where you want something serious without ceremony.

More about Chateau d'Oupia

Château d'Oupia is the archetypal Languedoc house red: honest, generous, old-vine wine from the hills of the Minervois, made by a family that has never been interested in fashion.

The estate surrounds a medieval castle in the village of Oupia, on the Hérault side of the Minervois appellation. André Iché inherited the property and, unlike most of his neighbors, never joined the village cooperative. For years he sold his wine in bulk to local négociants, until a winemaker from Burgundy persuaded him to bottle it himself. He went on to rebuild the cellar and reclaim steep terraces that had been abandoned since the late 19th century. Since his death in 2007, his daughter Marie-Pierre Iché has run the estate.

Old Carignan is the backbone, some of it close to a century old, alongside Syrah, Grenache and a little Cinsault. The range runs from Les Hérétiques, a lively IGP Pays d'Hérault red, through the Minervois Tradition to the oak-aged Cuvée des Barons and Nobilis from the best plots. Expect dark fruit, garrigue and spice, with enough structure for the table. These are bistro wines in the best sense, and they age better than their modesty suggests.
