Château Simone is Provence's culty superstar. Way back in 1948 they became one of the only domaines ever to get their own private AOC: Palette, a tiny appellation just east of Aix-en-Provence. The vines sit on a north-facing, limestone-rich slope that keeps the wines fresh despite the Provencal heat, and they age spectacularly. The Palette Rouge, as Neal puts it, is "tenacious but ultimately elegant", complex, savory and straight-up delicious with food. The 2006 is fully mature now and showing all that complexity.

Jean-François Rougier is the seventh generation stewarding this Provençal jewel, one of the world's rarest appellations. Château Simone holds a near-monopoly on Palette, a microclimate just south of Aix-en-Provence where Grenache, Mourvèdre, and Cinsault have grown for centuries.
