In Spain, vermut isn't a cocktail ingredient waiting for gin to show up. It's a ritual: late morning, a bar, ice, an olive, and no further explanation required. Cueva Nueva builds theirs on a Spanish wine base of Airen and Garnacha Blanca, which is then aromatized with botanicals and sweetened into something bittersweet and eminently drinkable. Pour it over plenty of ice with a slice of orange and an olive and you have the whole tradition in a glass. It also earns its keep in a Negroni or a Manhattan if that's more your speed. Honest, affordable, and made to be poured generously.
