Cueva Nueva, Vermouth/Vermut, NV

In Spain, vermut isn't a cocktail ingredient waiting for gin to show up. It's a ritual: late morning, a bar, ice, an olive, and no further explanation required. Cueva Nueva builds theirs on a Spanish wine base of Airen and Garnacha Blanca, which is then aromatized with botanicals and sweetened into something bittersweet and eminently drinkable. Pour it over plenty of ice with a slice of orange and an olive and you have the whole tradition in a glass. It also earns its keep in a Negroni or a Manhattan if that's more your speed. Honest, affordable, and made to be poured generously.

More about Cueva Nueva

Cueva Nueva is a love letter to la hora del vermut, the Spanish ritual of a late-morning glass of vermouth over ice with an olive and a slice of orange.

Launched in 2024 by Phi Peinado and David Neimanis, two Americans settled in Spain, it's made with a long-established bodega in Tarragona in the traditional Reus style. The base is white wine, mostly Garnacha Blanca with some Airén, from Terra Alta and Montsant. It's aromatized with 88 botanicals, including wormwood, orange peel, gentian, cinnamon and Mediterranean herbs, then fortified to 16%, sweetened and aged in French oak with a little older vermouth from a solera. The result: bittersweet, gently spiced and fresh. Pour it over ice, or use it in a Negroni or an Adonis.
