A single-vineyard Pinot from one of the Hautes-Côtes' most carefully tended addresses. En Cre sits in the protected valley around David Trousselle's Baubigny cellar — warm enough that Pinot Noir ripens fully, cool enough to keep things honest. Trousselle destems, ferments with native yeast over a gentle 15-20 day maceration, and raises the wine in barrel with no more than 20% new oak. The estate is organic, ECOCERT certified from 2022. 2024 in the Côte de Beaune yielded reds defined by tenacity and precision — taut, gastronomic, fresh — and that profile suits Trousselle's transparent style perfectly.

David Trousselle works out of Orches, a hamlet high in the Hautes-Côtes de Beaune, one of Burgundy's last real pockets of value. He dry farms with organic and sustainable practices, ferments with indigenous yeasts and bottles without fining or filtration. The range runs from old-vine Gamay Coteaux Bourguignons and Hautes-Côtes reds and whites to village Auxey-Duresses and Santenay. Honest, vibrant Burgundy that proves you don't need a famous name or a famous price for real flavor.

Roast duck breast with cherry sauce, herb-rubbed pork loin, or a slow-cooked coq au vin. Also pairs nicely with grilled salmon, mushroom-stuffed crepes, or a lentil and sausage cassoulet.

Tasting Profile

Red cherry, cranberry, and wild strawberry over forest floor, crushed stone, and a whisper of clove. Medium-bodied with bright acidity, fine tannins, and a savory, mineral-tinged finish.
