Jérôme Dehours reclaimed his family's Champagne estate in 1996 and made a radical choice: Pinot Meunier—often dismissed as Champagne's secondary grape—would be the foundation. About sixty-five percent Meunier with Pinot Noir and Chardonnay, fermented in both oak and stainless steel, with forty-eight percent réserve wines kept in perpetual Solera since 1998. The result is creamy and softly effervescent, with apple blossoms, elderflower, baked cherry, and dried raspberry. This is Champagne made to drink, not just to celebrate.

Fourteen hectares split across 42 different parcels in Mareuil-le-Port, Oeuilly, and Troissy, each with different sun-exposure, soil, vines, height, age.
