Founded in 2012 by a husband and wife team, originally based out of a basement in Harlem, Doc Herson's is New York's first absinthe distillery, focused on three different iterations of the famed spirit. Everything is done 100% by hand, from harvesting the botanicals to labelling the bottles. These are unique interpretations of a spirit that is largely misunderstood and definitely underappreciated.
