Ask Vouvray insiders to name the appellation's single greatest vineyard and the answer usually comes down to two sites, Le Mont or Clos du Bourg. This bottle is Huet's dry take on Le Mont. Vouvray has no official grand crus, but people who know the region well put this slope in that company. Gaston Huet bought it in 1957, nearly three decades after founding the domaine. It's 8 hectares on Vouvray's Première Côte, with less clay and more stone than the estate's original Le Haut-Lieu, and the green-tinged clay is shot through with mica and silica. Le Mont tends to give the most linear, precise wine in the Huet lineup. Huet decides every year whether each vineyard becomes Sec, Demi-Sec or sweet Moelleux, so a dry Le Mont is a deliberate choice to let the site speak plainly. The vines have been farmed biodynamically since 1990 (certified since 1993), which puts Huet among the earliest adopters. Today Benjamin Joliveau leads the team for owners Sarah and Hugo Hwang. He's a Vouvray native who spent a decade working alongside longtime winemaker Jean-Bernard Berthomé. Young Le Mont shows its minerality up front, and wines from this vineyard gain length and finesse with age, so open one now and put another away.

Flatiron's Take

From the Importer

What Polaner Selections has to say about this wine:

VINEYARD

Purchased in 1957, Le Mont lies on the esteemed Premiere Côte. With less clay and more stone than Le Haut-Lieu, Le Mont yields young wines of intense minerality. Size: 8 hectares

SOIL

Clay has a green tinge, and ample stone and silica present.

VITICULTURE

All grapes harvest by hand, which enables picking by successive tries - each tri being a separate pass by the workers through the vineyard, ensuring only the best bunches of ripest (or even botrytised) grapes. Noel Pinguet was one of the first French vignerons to adopt biodynamic viticulture and credit biodynamics with enhancing the personalities of the estate's terroirs.

VINIFICATION

Undergoes temperature-controlled fermentation in large, old oak demi-muids as well as stainless steel vats. There is no encouragement of the malolactic fermentation, thus many Huet wines remain rich in malic acid, a character that brings an age-worthiness to the wines

AGING

Aged in large demi-muids

Tasting Notes & Food Pairings

Perfect Pairings

Pork rillettes from nearby Tours with crusty bread; Sainte-Maure de Touraine or other Loire goat cheeses; pike or walleye with beurre blanc; seared scallops; sushi and sashimi; roast chicken with tarragon cream sauce.

Tasting Profile

Expect a taut, linear dry Chenin Blanc in the classic Le Mont mould: quince, green apple, lemon zest and a hint of beeswax over a pronounced stony, flinty minerality. The body is medium and precise, carried by bright, cutting acidity (think Chablis-like tension), finishing long, dry and saline. Typically it gains texture and finesse with age.
