Ramonet is one of the towering names of white Burgundy, the family that helped make Chassagne-Montrachet famous, and Les Ruchottes is one of their signature Premier Cru sites. This is Chardonnay from a single climat on the southern edge of Chassagne, a vineyard known for combining richness with cut and a stony, almost saline backbone. The 2012 vintage was small and concentrated, and with more than a decade in bottle this is drinking in its mature window, where the fruit folds into honey, nut, and mineral. Decant and serve cool but not cold, around 50-55F. This is special-occasion white Burgundy from a benchmark address.
