Domaine Pierre Savoye is located on the Cote de Py in the village of Corcelles. The vineyards cover 12 hectares where the soil consists of ferruginous shales. The soil is planted 100% with Gamay Noir a Jus Blanc, truly a noble grape (despite the medieval edicts of Phillip the Bold and Phillip the Good). The vines are 15-50 years old, with the exception of a few parcels that are 70 years old. The annual harvest is 45-50 hectoliters per hectare. All grapes are hand harvested. Vinification is traditional: carbonic maceration at the beginning followed by a long fermentation in cement tanks.
