A library Burgundy from one of the appellation's most consequential addresses, drinking exactly where it should be at thirty years old. Emmanuel Rouget is the nephew of the late Henri Jayer, who took on Emmanuel as protégé in 1985 and progressively handed off his vineyards over the following years — Jayer continued bottling under his own name until retiring in 2001. The 1995 Savigny-lès-Beaune therefore comes from the heart of that mentor-apprentice era, when Jayer was still actively shaping the wines and the Rouget label was still finding its voice. 1995 was a classical, structured Burgundy vintage — built for the long arc — and three decades in bottle have pushed this wine into full maturity with all the secondary and tertiary complexity that makes old Burgundy unlike anything else. A library bottle for the converted.

Tasting Notes & Food Pairings

Perfect Pairings

Mature Pinot Noir wants gentle, savory partners — roast duck with cherries, mushroom risotto with truffle, coq au vin, squab with foie gras, or a cheese course featuring aged Comté and Époisses.

Tasting Profile

Fully resolved — dried cherry, forest floor, dried rose, mushroom, truffle, leather, and sous-bois. The tannins are silky and integrated, the acidity bright, the finish long and savory with the quiet power of mature Burgundy.
