Eric Bordelet was running the wine program at L'Arpege in Paris before he went home to Normandy to take over the family farm, and he brought a sommelier's obsession with site home with him. Poire Granit is made from ancient pear trees, some of them centuries old, rooted in granite subsoils, and it drinks like a wine that happens to be made from pears. Gently sparkling and low in alcohol, it is all orchard fruit and wet-stone tension, with a fine bitter grip on the finish that keeps it from ever going simple on you. Wild yeast, and then the bottle does the rest. Few bottles in the store work this well at brunch and again at the end of a long dinner.
