Emilia-Romagna is fizzy-wine country — when your local cuisine runs on Parmigiano, prosciutto, and pork fat, you want bubbles with the acidity to cut through it all. This dry frizzante is made from the white Pignoletto grape grown in the hills of Castelvetro near Modena, where clay, limestone, and silt soils give it freshness and snap. Imported by Kermit Lynch, it stays a regional secret mostly because the locals drink it all themselves. Pop it cold as an aperitivo or run it straight through a rich meal.

There’s a pleasant inner sweetness up front, nicely contrasted by a well-chiseled bead of fine bubbles and a bitter twang of savory spice. Fattoria Moretto represents the artisan Lambrusco revolution happening in Castelvetro, near Modena. The Altariva family started as sharecroppers trading grapes in carboys; by 1991, Fabio and Fausto decided to bottle their own Lambrusco Grasparossa. Twenty years of organic farming later, they're making some of the most interesting dry, sparkling red wines anywhere.
