Paiagallo is Giovanni Canonica's home cru, the hillside just outside the village of Barolo, and it is the wine that turned him into a quiet cult among people who like their Nebbiolo old-school. He works from a small cellar under his house: macerations that run a month or more, aging in cement and big old Slavonian botti, minimal sulfur, no filtration. The wines are pale, translucent and almost shockingly perfumed, and they taste like Barolo did before anyone thought to make it taste like anything else. 2008 was a long, cool season in the Langhe — a classic year that gave structure and bright acidity rather than early flesh — and at eighteen years this has grown into its tannins: rose petal and dried cherry, tar, orange peel and forest floor, with an earthy grip on the finish. If well stored it is right in its window now. Decant it and let it stretch out.

Hidden legend in Barolo, living in a small agriturismo above the village, making wine in cellars below. Started with 1.5 hectares in Paiagallo (vines on the hill above town), later inherited older vines in Grinzane Cavour with a rare rose clone of Nebbiolo. No herbicides, no pesticides, only tradition. Production is insanely limited.
