This Nebbiolo comes from Barolo vineyards and a Barolo cellar and is made the Barolo way, but it carries a Langhe label, which makes it the easiest way into the wines of one of the zone's last true traditionalists. Giovanni Canonica first made this cuvée in 2013, from the parts of his Paiagallo and Grinzane Cavour vineyards that he himself judged the least interesting. (We like a grower who will tell you which of his rows he rates lowest.) Grinzane Cavour is the small holding he inherited in the early 2010s. Everything else is classic Canonica. The vines are farmed organically, without certification, with nothing but copper and sulfur. The grapes are destemmed, macerated for 30 to 40 days with native yeasts, pressed in a vertical hand press and aged in cement and Slavonian oak, all in the cellars under the small agriturismo he runs with his family in Barolo village. This 2016 already has real bottle age, so it's the one to open while the Barolos sleep.

More about Giovanni Canonica

Hidden legend in Barolo, living in a small agriturismo above the village, making wine in cellars below. Started with 1.5 hectares in Paiagallo (vines on the hill above town), later inherited older vines in Grinzane Cavour with a rare rose clone of Nebbiolo. No herbicides, no pesticides, only tradition. Production is insanely limited.

Tasting Notes & Food Pairings

Perfect Pairings

Tajarin with meat ragù, agnolotti del plin, porcini risotto, beef braised in red wine, roast guinea fowl, or a plate of aged Castelmagno or Toma.

Tasting Profile

Expect traditional Nebbiolo in the Barolo mould: sour cherry, dried roses, tar and a savoury, earthy edge, with no sweet new-oak gloss thanks to ageing in cement and Slavonian oak. Typically medium-bodied but firmly structured, with bright acidity and grippy tannins from the long maceration, finishing dry and lingering. Think a junior Barolo, a touch more approachable.
