Founded in 1835 by Manuel María González, González Byass remains family-owned through the 4th and 5th generation. Una Palma belongs to their exclusive Palmas series of rare, unfiltered En Rama sherries. Selected from casks that retained delicate flor yeast despite exceeding six years of aging, these wines are bottled unfiltered and unclarified to preserve maximum character. The chalky albariza soils of Jerez—white earth that stores winter rainfall and releases it slowly through dry summers—produce the neutral Palomino base wine, while the living flor culture creates the distinctive tangy, yeasty complexity. Serve well-chilled as an aperitif with almonds, olives, or seafood. Best consumed within 12-18 months of release.

"The 2018 bottling of the NV Fino Una Palma is selected from the three Tío Pepe casks that were six years under flor. It has a classical and serious profile, with a dry palate and a strong sensation of biological aging, notes of esparto grass and wet chalk and a long-lasting, dry and salty finish. It was bottled unfined and unfiltered, en rama, in October 2018. 2,000 bottles produced." —Luis Gutiérrez

Tasting Profile

Golden fino with distinctive saline character, almond and dried fruit notes, bone-dry finish with nuanced salinity.

González Byass is without a doubt one of sherry country’s most iconic bodegas. It is also arguably the bodega that first put Fino sherry on the map when they began to widely export their signature Tio Pepe Fino in the second half of the 19th Century.

Antonio Flores, now the master blender at González Byass, was quite literally born with only a floor between himself and the prized solera of Tio Pepe stored in the subterranean room below. Few other voices and wines resonate so symbolically, so historically, and so globally as González Byass Tio Pepe Fino under the masterful guidance of Antonio Flores. While the whole Tio Pepe criadera system is now very large (filling more than one warehouse and over 20,000 barrels), the final, most prized section of the solera (still that room below Flores' birth place) is actually quite small and very intimate.
